or what about after copying the sim contacts to the phone, is there a way to hide the sim contacts without deleting them so there are no double entries?

What about going the other way? A one-step solution to copy all contacts in phone to the SIM (my Nokia and Sony phones have had this feature). This is most useful when you're going to leave your handset behind for the day/week, but you're taking your SIM and may be using another handset in an emergency, etc.
